Laura Theodore came to plant-based eating for the three-fold motivations of better health, environmental sustainability, and animal welfare. She has found that eating vegan has expanded her cooking repertoire. Laura creates accessible plant-based versions of favorites like lasagna, chili, burgers, and lots of desserts. Here are her top tips and tricks for vegan eating:

1.) If you're just starting out on a plant-based diet, add one meal a week. It's difficult to overhaul your entire diet at once. Adding one meat—and dairy-free—meal a week allows you to add new ingredients and recipes slowly, building your repertoire without getting overwhelmed.

2.) Root vegetables are hearty and comforting bases for fall and winter meals. Squashes filled with plant-based stuffings, like tofu, seitan, or grains, make filling and beautiful main courses. Quinoa is a high-protein option!

3.) When entertaining a crowd with multiple dietary considerations, especially for a holiday, go for vegan comfort foods like lasagna or stuffed vegetables like mushrooms and squash. You can have an incredible plant-based Thanksgiving spread with stuffed vegetables, sides, and pumpkin pie!

4.) Indulge your sweet tooth! When transitioning to a plant-based diet, you don't want to feel like you're missing out. When cooking without eggs and dairy, you can use ingredients like coconut milk, hemp milk, cashew milk, ground flaxseeds, mashed banana, tofu, and ground cashews.
