Q. Is dehydrated fruit good for you, or are nutrients lost in the drying process? I was thinking of getting a dehydrator, but wasn’t sure if it was a good thing nutrient-wise.
Answer. Dehydration will cause some nutrient losses—particularly antioxidants such as beta-carotene and vitamin C. (Dehydration has little to no effect on minerals or fiber content.)
Keep in mind, however, that fruits and vegetables lose nutrients just sitting around on the counter or in the fridge, as well. That doesn’t mean that they lose all of their nutritional value.
Dehydrating fruits and vegetables can be a great way to preserve excess produce and to create nutritious, portable snacks.
To maximize the nutritional value, try to start with the freshest possible produce. Also, remember that portion control can be a little bit more challenging with dried fruit. Without all that water, it doesn’t fill you up quite as fast. As a result, you can easily end up eating several servings’ worth. Although fruit is nutritious, it’s also a fairly concentrated source of natural sugar. I recommend limiting fruit to 2-4 servings a day.
